And today,we will give a simple introduction about decanter. For old aged wine, there are lots of sediment which caused by the tannins and pigment, will blocked observing and also will caused a bitter taste. So we need to pour the wine into the decanter steady and slowly, and left the sediment in the bottom of the decanter, and we call this process decanting.
As for the young wine, we can make the wine work with air sufficiently by pour it into the decanter,and this process can oxidize the wine,softens the tannins, also released aroma.We named this process Breathing.
