43-year-old Englishman Philip serving wine consultant in Beijing, he had learned a stack of cups craft work at the Ritz and the Savoy. He said stacks of cups is incumbent on sommeliers, tried to prepare 140 Blackjack tables for lunch, it was quickly filled and he trained 280 cups (two per table) effort especially when working in the Ritz.
